I am headed out of town for a few days on a work trip and wanted to make something for dinner tonight that would make enough so Chris could eat the leftovers for dinner while I am gone. (I know gold star in the wife column haha)
King Ranch Chicken is one of those weird meals that does not sound like it would be good and frankly doesn’t look good while you are making it, but I promise… it is delicious! I follow the recipe from Ready Set Eat with a few tweaks and additions!

- PAM® Original No-Stick Cooking Spray
- 1/4 cup Butter
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped yellow onion
- 1 can (10-3/4 oz each) condensed cream of chicken soup
- 1 can (10-3/4 oz each) condensed cream of mushroom soup
- 1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
- 2 cups chopped cooked chicken breast
- 12 corn tortillas (6 inch), torn into bite-size pieces
- 2 cups shredded Cheddar cheese (2 cups = 8 oz)
STEP ONE
Preheat oven to 325°F. Spray 13×9-inch baking dish with cooking spray; set aside.
STEP TWO
Melt butter in large saucepan over medium heat. Add bell pepper and onion (I also add garlic to this step); cook and stir about 5 minutes or until tender.
Honestly is there anything better than the smell of onions and garlic cooking in butter? haha
This is the garlic that I love having on hand! It makes cooking with garlic so much easier!
STEP TWO CONT.
The recipes says to add the soups, undrained tomatoes and chicken to the sauce pan, but I prefer to dump everything in a big bowl so I can really mix it up.
*Also, Chris and I are not big fans of tomatoes, so I only use 1/2 a can of Ro*Tel® and add about 1/4- 1/2 a cup of salsa to the mixture in its place!
I love making easy recipes even easier, I used rotisserie chicken for a long time when making this, and then I discovered this already seasoned chicken! Many grocery stores carry different brands/ varieties of it!
This is the part that I said does NOT look like it would taste good, but keep going! I promise it comes together!
STEP THREE
Layer one-third each of tortillas, chicken mixture and cheese evenly in dish. Repeat layers twice more. Bake uncovered 40 minutes or until hot and bubbly.
This dish comes out SO hot! I recommend waiting 10 minutes (I actually set a timer for this part) so it can cool down a little!
